Ingredients for Protein Rich Cheakpea – Paneer Salad recipe (for 2 servings)

  1. 1 cup boiled chickpeas (chana) – high in protein (you can use canned chickpea)
  2. ½ cup boiled green moong (mung beans)
  3. ¼ cup paneer (cottage cheese), diced
  4. 1 small cucumber, chopped
  5. 1 medium tomato, chopped
  6. 1 carrot, chopped
  7. ½ onion, finely chopped
  8. ¼ cup boiled sweet corn (optional)
  9. 2 tbsp roasted peanuts or seeds (pumpkin/sunflower)
  10. 1 green chilli, chopped (optional)
  11. 1 tbsp chopped coriander leaves
  12. Juice of 1 lemon
  13. Salt and black pepper to taste
  14. ½ tsp chaat masala (optional)
  15. 1 tbsp olive oil (optional)

Steps for making Protein Rich Cheakpea – Paneer Salad

  1. Boil overnight/ 6 hours soaked chickpeas in the presure cooker for 4 whistles .
  2. Boil overnight/ 6 hours soaked green moong, and sweet corn until soft but not mushy. Drain and let cool.
  3. Chop all veggies ( Tomato, onion, carrots, green chillies , green coriander leaves) and paneer into small bite-sized pieces.
  4. In a large bowl, combine chickpeas, moong, paneer, corn, and chopped veggies.
  5. Add peanuts/seeds, green chilli, and coriander leaves.
  6. Sprinkle salt, black pepper, chaat masala.
  7. Squeeze in lemon juice and drizzle olive oil (if using).
  8. Toss well to mix everything evenly, and your Protein Rich Cheakpea – Paneer Salad is ready to serve.
