Ingredients for Protein Rich Cheakpea – Paneer Salad recipe (for 2 servings)
- 1 cup boiled chickpeas (chana) – high in protein (you can use canned chickpea)
- ½ cup boiled green moong (mung beans)
- ¼ cup paneer (cottage cheese), diced
- 1 small cucumber, chopped
- 1 medium tomato, chopped
- 1 carrot, chopped
- ½ onion, finely chopped
- ¼ cup boiled sweet corn (optional)
- 2 tbsp roasted peanuts or seeds (pumpkin/sunflower)
- 1 green chilli, chopped (optional)
- 1 tbsp chopped coriander leaves
- Juice of 1 lemon
- Salt and black pepper to taste
- ½ tsp chaat masala (optional)
- 1 tbsp olive oil (optional)
Steps for making Protein Rich Cheakpea – Paneer Salad
- Boil overnight/ 6 hours soaked chickpeas in the presure cooker for 4 whistles .
- Boil overnight/ 6 hours soaked green moong, and sweet corn until soft but not mushy. Drain and let cool.
- Chop all veggies ( Tomato, onion, carrots, green chillies , green coriander leaves) and paneer into small bite-sized pieces.
- In a large bowl, combine chickpeas, moong, paneer, corn, and chopped veggies.
- Add peanuts/seeds, green chilli, and coriander leaves.
- Sprinkle salt, black pepper, chaat masala.
- Squeeze in lemon juice and drizzle olive oil (if using).
