🍴 Serves: 4–6 people (makes 12 muffins)
Ingredients for making Handvo Muffin Recipe
A. For the Batter of Handvo Muffin
- 2 cup rice (Non Basmati)
- 1.5 cup chana dal (split Bengal gram)
- ½ cup urad dal (split black gram)
- ¼ cup moong dal (optional)
- 1 spoon Fenugreek seeds
- 1 cup grated bottle gourd (lauki/doodhi)
- ½ cup curd (yogurt), slightly sour
- 3 tsp garlic- ginger- green chili paste
- 1 tsp turmeric powder
- 2 tsp sugar
- Salt to taste
- ½ tsp baking soda OR 1 tsp Eno fruit salt

B. Tempering for Handvo Muffin
- 4 tbsp oil
- 1 tsp mustard seeds
- 2 tsp sesame seeds (til)
- 1 tsp cumin seeds
- 3 dried red chilies
- A pinch of asafoetida (hing)
- Curry leaves (5–6)
C. Optional Veggies (can mix any):
- ¼ cup grated Carrots
- ¼ cup finely chopped spinach or methi
- ½ Cup green peas
- ½ Cup corn
Preparation Steps for Handvo Muffin Recipe
Step 1: Soak and Grind all lentils and rice.
- Wash thoroughly and soak rice and all lentils with 1 spoon of Fenugreek seeds together in water for at least 4–6 hours or overnight.
- Drain, wash and grind coarsely (like idli batter) using ½ cup curd and half cup Water.
- Now keep for fermentation for 6–8 hours in a warm place.


Step 2: Prepare Batter of Handvo
- After fermentation, add:
Grated lauki (squeeze out excess water)
Optional veggies (carrot, spinach, peas,corn etc.)
Garlic -Ginger-green chili paste
Turmeric, sugar, and salt
- Mix well.

Step 3: Tempering for Handvo Muffin
- Heat 4 spoons of oil in a small pan.
- Add mustard seeds and dried chillies; when they splutter, add cumin, sesame seeds, asafoetida and curry leaves.
- Pour tempering into the batter and mix well.
- Add half spoon of backing soda in the tempered better .
Step 4: Baking in Muffin Tray
- Preheat the oven at 180°C (350°F) for 10 minutes.
- Grease muffin tray cavities with oil .( Use groundnut oil or sunflower oil or olive oil)
- Spoon the batter into each cavity (fill about ¾th full).
- Sprinkle sesame seeds on top for extra crunch.
- Bake at 180°C for 20–25 minutes, or until tops are golden brown and a toothpick comes out clean.


How to serve Handvo Muffin?
Apply oil on the Handvo Muffin before serving.
Serve warm with green chutney or sweet tamarind chutney.
